Roll With It: Sushi at Home with Kathryn Joel & Elyse Chatterton

Join Kathryn and Elyse for our hands-on sushi rolling workshop and learn how to perfectly prepare sushi rice at home, and how to use it to create your own sushi rolls. From the proper preparation of rice to choosing the right fish and accompaniments, this class will provide you with a solid foundation for turning your home kitchen into your own private sushi bar. And to round out your experience we'll also be preparing a selection of tempura and a miso soup with home made shrimp dashi as well.

Vegetarian Cooking the Indian Way. With Kathryn Joel & Doreen Prei

We love the flavours of the Indian kitchen, so we're excited to be drawing on some of the traditions of Indian Vegetarian cooking in this new Vegetarian cooking class. We'll send you home with the skills you need to be able to create your own Indian spice blends, and to make your own Paneer. And we'll be using our spices and homemade cheese as we cook with you a spice scented menu including a selection of Pakoras, Dals and Rice, Curried Vegetables and Pulses, and Chutneys and Raitas to freshen things up. A Taste of Emilia Romagna. Italian Cooking with Kathryn Joel & Doreen Prei

Perhaps you haven't heard of the region of Emilia Romagna?  But you have undoubtedly experienced its most famous ingredients: Prosciutto di Parma; Parmigiano-Reggiano; and Balsamic Vinegar. In this new regional Italian cooking class we will be celebrating the cuisine of Emilia Romagna, starting with an antipasto platter including, of course, these 3 famous products. Then we'll turn to a simple but elegant Balsamic Roast Chicken, served with an Onion & Basil Mashed Potato and Oven Roasted Radicchio. And all the while we'll be working on our version of the city of Bologna's famous Lasagna alla Bolognese, a rich and delicious layering of  fresh pasta, a three meat ragu, and a nutmeg infused besciamella. Then we'll finish with Zuppa Inglese, an Italian interpretation of the English trifle that originated in, and is still characteristic of, the region.

Friday Night Kitchen Party. With Doreen Prei & Kathryn Joel

Join Doreen and Kathryn for a six-course menu of our favourite dishes, finished in our open kitchen and served as a seated dinner. We'll be pulling out all the stops as we create a seasonal menu filled with local inspiration and ingredients. The studio will be set up with 3 communal tables for 8 each, so come with a group of friends or family, or come on your own and make some new friends. We'll be dicing, slicing, shucking, and sharpening, so bring along your own favourite knife if you prefer, or choose to use one of ours. The focus is on knife skills, but we'll also be cooking up some tasty and seasonal appies with the ingredients that we chop. You'll leave us with a new mastery and confidence in wielding your knife when you cook at home, as well as a selection of recipes to get you cooking for your friends and family as you show off and hone your new skills.

A Taste of Lombardy. Italian Regional Cooking with Kathryn Joel & Elyse Chatterton

We are delighted to introduce this delicious new class exploring the cuisine of the Northern Italian region of Lombardy. We'll be starting in the Lombardy Alps with a crostini of Radicchio and Taleggio Cheese. Then from Mantua, we will introduce you to our take on the classic Tortelli di Zucca, delicious squash filled tortelli served with a sage butter. And our main course could only be Osso Bucco, Milan's most famous specialty, served with its classic accompaniment of Risotto alla Milanese. Dessert will be our surprise, according to seasonal availability.

Paella. With Kathryn Joel & Doreen Prei

The ultimate in one-pot meals, the paella is a classic dish, beloved by all. Kathryn and Doreen will take you through every step on the road to achieving a perfect paella, from the selection of rice, meats and seafood to choosing the right spices and making the appropriate stock. Together we'll prepare two paellas. The first is an Arroz Negro, a Catalan variation on Paella, featuring a selection of seafood and coloured black with cuttlefish ink. Then we'll be making the original Paella a la Valenciana, made with chicken, rabbit, vegetables and herbs. And we'll even throw together a quick tapas and a green salad as we learn.

Mexican Inspired Session Two. With Kathryn Joel & Doreen Prei

We'll be heading south for our inspiration, as we introduce this second class in our Mexican menu series (session one is NOT a prerequisite). Together, Doreen and Kathryn will teach you how to fuse the flavours of Mexico with  European culinary techniques, as they cook with you a menu of Mexican recipes. We'll start with a light and refreshing Ceviche, before moving on to everyone's favourite, Fish Tacos, using loins of Icelandic Redfish from our friends at Ocean Odyssey. And we'll serve these alongside a vegetarian Taco, filled with Rajas Poblanas. Our main course is a pan seared duck breast, served with Pipián Rojo, a deliciously fragrant sauce combining a trio of Mexican chillies with pumpkin seeds, roasted tomatoes and more. Then for dessert we're serving Churros, together with a rich and creamy chocolate sauce.

From Farm to Table: A Market Tour & Cooking Class with Kathryn & Doreen

Why not celebrate the Mothers' Day Weekend with one of our always popular tours of the Downtown Farmers' Market, followed by a class back at Get Cooking including lunch, and a glass or two of wine. A World of Curries. With Kathryn Joel & Elyse Chatterton

What is a curry? Join us, and find out. We'll be looking at dry curry powders as well as wet curry pastes, and how to use them in a variety of dishes using recipes that take us from fast cooking to slow, and from seafood to chicken, beef or lamb. Curries are a staple in so many regions beyond the borders of India. From South East Asia to Japan, the UK and the Carribean, curry, in its differing guises, is a beloved dish of so many nations. French Classics Session Two. With Doreen Prei & Kathryn Joel

Join Kathryn and Doreen for this second in our new series on Classic French cooking and techniques (Session One is NOT prerequisite). In each session we'll be exploring and celebrating some of the traditions of the French kitchen with a menu of delicious but approachable French recipes. In this session we'll be starting in France's culinary capital Lyon, with a classic Salad Lyonnaise of greens with bacon lardons, topped with a perfectly poached egg.  Then we're heading to Marseille for a saffron scented Bourride, a delicious fish stew finished with Aïoli. Next stop is in Dijon for our take on Chicken Dijonnaise, prepared with our own house-made crème fraiche and scented with fresh tarragon.  Then finally for dessert we'll be travelling to the Limousin region for a classic Clafoutis made up of fresh fruit baked in a waffle like batter.

Thai Street Food. With Kathryn Joel

Whisk yourself away to the bustling streets and markets of Thailand! Kathryn and Elyse will be cooking up a feast of Thai street food that will feature Hoi Tod, a delicious omelette stir fried with a mung bean batter and shellfish, followed by Pork Satay, Crab Fried Rice and Chicken in Pandan Leaves. Then for dessert we'll be grilling bananas and serving them with a homemade coconut ice cream. A Taste of Vietnam. With Kathryn Joel & Doreen Prei

Last August Kathryn and Doreen travelled to Vietnam to explore some of the flavours and techniques of the Vietnamese kitchen. Now they are recreating their favourite experiences with a series of classes celebrating the Taste of Vietnam. Join us for this new class incorporating some of their favourite dishes. Your menu will include Ban Xeo, a rice paper wrapped omelette of rice and mung bean flours, filled with shrimp and pork. Next up is a fresh and herbacious Crab & Pomelo salad, dressed with Nuoc Mam Cham. And because both broths and rice noodles are so fundamental to Vietnamese cooking, we'll be cooking up a Pork Rib & Squid Broth, and serving it with fresh rice noodles. Finally, and in keeping with the seafood theme, we'll be preparing our own interpretation of Caramel Braised Fish, using locally available Arctic Char, or Salmon. Then we'll finish the class with a taste of Egg Coffee, before we send you home ready to tackle Vietnamese cooking on your own.

Asian Pancakes. With Doreen Prei & Kathryn Joel

We're delighted to introduce this brand new class featuring some of our favourite Asian Pancakes. We'll be starting with Ban Xeo, a crisp and delicious Vietnamese pancake filled with pork, shrimp and sprouts then wrapped up with herbs in a soft rice paper and dunked in an aromatic dipping sauce. Next we're off to Thailand as we prepare our version of an Oyster Hoi Tod, and serve it street food style with lashings of Sriracha Sauce. Then our last savoury pancake takes us to China for our house smoked Duck pancake, served with cucumbers, green onions and Hoi Sin. And finally for dessert we're travelling to Korea, with a yeast risen sugar filled Hotteok, the last pancake of the day.

An Introduction to Filled Pastas with Doreen Prei & Kathryn Joel

As a complement to our ever popular fresh pasta cooking class, we're excited to be adding this new hands-on class focused on creating your own filled pastas. Together we'll be making a fresh pasta dough that is rich with egg yolks and olive oil, and perfect for achieving light and delicate Ravioli. We'll be exploring different shapes, fillings and sauces, as we prepare a multi-course meal of delicious fresh pastas. And you'll leave us with all the skills you need to make your own at home too. The Get Cooking Kitchen Challenge 2018

We're excited to invite you to register for our June 2018 Kitchen Challenge, the second in our new Kitchen Challenge Series. Each Challenge is open to six teams of two, with a Chef and Sous Chef (or 2 Co Chefs) needed on each team. So go choose your Sous Chef then register to join us and compete!

Each team will go head to head with one other team to prepare a single recipe, incorporating a Black Box ingredient. Get Cooking will provide the recipes, with a different recipe and black box ingredient in each round. But if you want to use the ingredients provided to create a recipe of your own, then that is perfectly fine!

When you're not competing, you'll be watching our other challengers compete and judging and dining on their results as well. The winning team will then go up against Doreen and Kathryn for the night's final show down.

In addition, each team can invite up to 4 spectators, who will be able to purchase snacks and drinks while they watch!

We'll be holding a Kitchen Challenge every 3 months, then inviting the winning and runner up teams back for a final battle at the end of the year. So if you win your Challenge we'll be bringing you back for our Final Challenge, in front of a ticketed audience since you'll want to bring along your friends and family to cheer you on!

Cost Per Team: $270 plus GST  (for 2 participants). Your Cost Includes: a 4-hour event including participation as competitor, audience and judge. And you'll be eating the night's results too! Drinks are not included but a selection of Wines and Beers will be available at our cash bar, all major cards accepted. Spectators can also purchase drinks, and a selection of snacks, while they watch.

Kids Pizza (ages 9-13). With Kathryn Joel & Elyse Chatterton

Send us your kids (ages 9-13) and we'll teach them how to make pizza, always a family favourite. Kathryn and Elyse will teach your kids how to make their own pizza dough then how to roll it, top it and bake it using a homemade tomato sauce and a selection of favourite toppings. Please note that in this class, your kids will be making and taking home their own pizza dough, which can be stored in your freezer.

The Whole Hog. With Elyse Chatterton & Kathryn Joel

Join Kathryn and Elyse for this this special new class exploring techniques in butchering a whole pig, how to make sausages and how to cook a variety of pork cuts too. We'll be bringing in a side of Irving's Farm pork, so your day will start with Elyse teaching you how to break it down. Sourdough Bread. With Prairie Mill's Owen Petervine

Join us for an afternoon of bread with the delightful Owen Petervine of Prairie Mill Bread. Owen will bake off some bread for you to sample as he introduces you to the world of sourdough starters. And you will each make your own loaf of sourdough with Owen, choosing the flour combination of your choice. While you bake, Kathryn will be on hand to make you a bowl of panzanella, and a seasonal soup to accompany Owen's freshly baked loaves. And for dessert, Owen will teach you to make his sourdough waffles, served up with maple syrup. On Thursday night we will be looking at Seafood Skills including curing, pan frying, poaching and grilling as well as making Fish and Shellfish stocks.

On Friday night we'll be moving onto poultry and meat, with a look at techniques for pan searing, grilling and roasting as well as how to make pan sauces, white stocks, brown stocks and demi-glace.

Then during our all-day Saturday session we'll be starting with brunch, building on Thursday's skills as we smoke some of our cured fish to serve with perfectly poached eggs and a lemon hollandaise. And we'll build on Friday night's skills too as we turn to some technical meat preparations while working on boned quails cooked two ways, a pulled chicken, chicken liver and mushroom terrine, and braised and pressed pork belly. And of course we'll be cooking up sauces and sides, focused on seasonality. Then to finish the day off right we'll be frying up some beignets from our own brioche dough, and serving them with a crème anglaise and a homemade stone fruit preserve.

Teens' Cooking Camp (Monday to Friday 9:30-1:30 Ages 14-17)

New in 2018 we're excited to announce our 5 day teens' boot camps, each an immersive hands on course in culinary techniques. Each day will follow a different theme:

Day 1 – Eggs & Custards - Poached Eggs, Omelettes, Quiches, Soufflés, Ice Creams & Brûlèes

Day 2 – Doughs - Fresh Pasta, Pastry, Pizza and Focaccia

Day 3 – Seafood including Fish & Shellfish Stocks

Day 4 – Poultry & Meat including Bone Broths

Day 5 – Kitchen Challenge - recipes provided for a culinary cookoff!

GET COOKING IS MOVING

This summer Get Cooking is moving it's kitchen from Kathryn's Riverbend home to a brand new commercial space at MacEwan University downtown. We expect to be open for business from mid-August and a brand new schedule of Fall classes and events will be online and available for booking by the end of July 2014.
