Our classes for this April and May 2018 will be online and available for purchase from Sunday February 26th at 5pm. We are currently finalizing our June schedule as we work on a number of new summer classes. June classes (after June 3rd) will be online and available for booking on Friday March 6th at 5pm.

Indian Favourites. With Kathryn Joel & Doreen Prei

Join us for this special class featuring a menu of  Indian restaurant favourites. We'll be exploring the techniques and flavours of the Indian kitchen as we show you how to prepare the dishes you love so much at home. We'll start with a look at Indian spice blends before we turn to making our potato, cauliflower and pea Samosas, prepared from scratch and served with a fresh green chutney.  Then we'll learn how to make homemade paneer, which we'll be using in our delicious Palak Paneer. And of course we'll be cooking up Butter Chicken, since it's at the top of so many people's lists of Indian faves, together with an accompanying Saffron Rice and a side dish or two inspired by the season. Then for dessert we'll break with tradition, and serve an Indian inspired Cardamom Chai Crème Brûlée. Join us, and we'll send you home with the knowledge and skills to start cooking Indian dishes on your own!

Roll With It: Sushi at Home with Kathryn Joel & Elyse Chatterton

Join Kathryn and Elyse for our hands-on sushi rolling workshop and learn how to perfectly prepare sushi rice at home, and how to use it to create your own sushi rolls. From the proper preparation of rice to choosing the right fish and accompaniments, this class will provide you with a solid foundation for turning your home kitchen into your own private sushi bar. How to Cook Shellfish. A Seafood Class with Doreen Prei & Kathryn Joel

Join Doreen and Kathryn for this new class focused on how to cook shellfish. We will introduce you to our favourite techniques for cooking crustaceans and molluscs, incorporated into a selection of recipes that you will be able to duplicate with ease on your own. And we'll send you home knowing where to source your shellfish, how to choose it, what flavours complement it best, and how to cook it perfectly.

The Get Cooking Kitchen Challenge 2018

We're excited to invite you to register for our March 2018 Kitchen Challenge, the second of six Kitchen Challenges that we'll be holding in 2018. Each Challenge is open to six teams of two, with a Chef and Sous Chef needed on each team. So go choose your Sous Chef then register to join us and compete!  Each team will go head to head with one other team to prepare a single recipe, incorporating a Black Box ingredient. And when you're not competing, you'll be watching our other challengers compete and judging their results as well. The winning team will then go up against Doreen and Kathryn for the night's final show down.

We'll be holding a Kitchen Challenge once a month for the next 6 months, then inviting each winning team back for a final battle in September. So if you win your Challenge we'll be bringing you back for our Final Challenge, in front of a ticketed audience since you'll want to bring along your friends and family to cheer you on!

Cost Per Team: $270 plus GST  (for 2 participants). Your Cost Includes: a 4-hour event including participation as competitor, audience and judge. And you'll be eating the night's results too! An Eggscellent Brunch with Doreen Prei & Kathryn Joel

Eggs are in nearly everything we prepare and eat – we use them in baking, we use them in sauces, we even use them in cocktails, but more than anywhere else, eggs are found on the breakfast table. Probably the single most versatile brunch ingredient, eggs can be prepared in a myriad of ways and are always satisfying, comforting, and oh-so-delicious! Join us for this special brunch class where we’ll be taking the simple egg and teaching you how to transform it. First we'll look at frittatas, perfect for a prepare ahead brunch, served with a green salad. Then we'll make our own savoury scones to accompany our seasonal version of an eggs benedict, teaching you how to poach eggs perfectly as well as how to prepare a light and delicious hollandaise sauce. Finally we'll turn to omelettes: we'll prepare a seasonal filling and also discuss other options, then you'll each make your own omelette to finish the class.

A Taste of Emilia Romagna. Italian Cooking with Kathryn Joel & Elyse Chatterton

Perhaps you haven't heard of the region of Emilia Romagna?  But you have undoubtedly experienced its most famous ingredients: Prosciutto di Parma; Parmigiano-Reggiano; and Balsamic Vinegar. In this new regional Italian cooking class we will be celebrating the cuisine of Emilia Romagna, starting with an antipasto platter including, of course, these 3 famous products. Then we'll turn to a simple but elegant Balsamic Roast Chicken, served with an Onion & Basil Mashed Potato and Oven Roasted Radicchio. And all the while we'll be working on our version of the city of Bologna's famous Lasagna alla Bolognese, a rich and delicious layering of  fresh pasta, a three meat ragu, and a nutmeg infused besciamella. Then we'll finish with Zuppa Inglese, an Italian interpretation of the English trifle that originated in, and is still characteristic of, the region.

Risotto & Arancini. With Kathryn Joel & Doreen Prei

Join us for our celebration of risotto, one of our favourite one pot meals. Kathryn will be teaching you the 5 essential steps toward creating any risotto, sending you home prepared to take your favourite ingredients and translate them into your own risotto meal. And what is a risotto without the right rice and a well made stock? So we'll be preparing a vegetable and a white chicken stock as well as discussing rice varietals, since these are the building blocks of any risotto. During your class we'll be preparing two types of risotto, to enjoy for dinner, using fresh and seasonal ingredients. Then we'll use our leftovers the Italian way, as we hand roll a selection of arancini, delicious stuffed and deep fried risotto balls designed to use up your risotto leftovers.

A Taste of China. With Kathryn Joel & Doreen Prei

Join us for our interpretive twist on Chinese cuisine, as we fuse Chinese culinary traditions with local ingredients. During your class, we'll be introducing you to some of the staple spices and sauces of the Chinese pantry.  Together we'll be exploring a  menu that will start with our own house-smoked duck, wrapped up in a freshly made pancake  along with green onions and hoisin sauce. Then we'll be turning to our wok as we prepare a spicy kung pao chicken, served with our own favourite sichuan cucumber salad. And next we'll be discussing slow cooking, the Chinese way, as we prepare our decadently delicious pork belly, slow cooked in a red braising stock then finished in a caramel sauce. Dessert will be our surprise!

A Moroccan Adventure. With Kathryn Joel & Elyse Chatterton

Let the heady perfume of the Spice Trail transport you to the markets of Marrakesh as you learn to prepare simple but delicious mezze, couscous, and tagines with Kathryn and Elyse.  Our menu will start with Kathryn's harissa spiced carrot dip, with our own homemade harissa of course, plus a smoky and aromatic baba ganoush. Next we'll be making a salad of beetroots with oranges and herbs, followed by some filo pastry briouats filled with lamb. And what would a Moroccan class be without a tagine? So we'll be preparing a traditional tagine of chicken with preserved lemons and green olives to serve with a herb scented couscous. St. Patrick's Day. An Irish Menu with Doreen Prei & Kathryn

Come celebrate St. Patrick’s Day with Doreen and Kathryn. Together, we’ll travel to the Emerald Isles with a menu celebrating Irish cooking. We'll be preparing our take on some classic Irish dishes and serving them with a selection of Irish beer and whiskey pairings, chosen by our colleagues at Color de Vino. In this special St Paddy’s Day class, we’ll make mussels with cider and bacon, Irish brown bread with house-cured and smoked salmon, followed by Irish Stew with Colcannon and, finally, a Guinness cake with whiskey ice cream for dessert.

Send us your kids (ages 9-13) and we'll teach them how to make pizza, always a family favourite. Kathryn and Elyse will teach your kids how to make their own pizza dough then how to roll it, top it and bake it using a homemade tomato sauce and a selection of favourite toppings. A Taste of Vietnam. With Kathryn Joel & Doreen Prei

Last August Kathryn and Doreen travelled to Vietnam to explore some of the flavours and techniques of the Vietnamese kitchen. Now they are recreating their favourite experiences with a series of classes celebrating the Taste of Vietnam. Join us for this new class incorporating some of their favourite dishes. Your menu will include Ban Xeo, a rice paper wrapped omelette of rice and mung bean flours, filled with shrimp and pork. Next up is a fresh and herbacious Crab & Pomelo salad, dressed with Nuoc Mam Cham. And because both broths and rice noodles are so fundamental to Vietnamese cooking, we'll be cooking up a Pork Rib & Squid Broth, and serving it with fresh rice noodles. Finally, and in keeping with the seafood theme, we'll be preparing our own interpretation of Caramel Braised Fish, using locally available Arctic Char, or Salmon. Then we'll finish the class with a taste of Egg Coffee, before we send you home ready to tackle Vietnamese cooking on your own.

Friday Night Kitchen Party. With Doreen Prei & Kathryn Joel

Join Doreen and Kathryn for a six-course menu of our favourite dishes, finished in our open kitchen and served as a seated dinner. Sourdough Bread. With Prairie Mill's Owen Petervine

Join us for an afternoon of bread with the delightful Owen Petervine of Prairie Mill Bread. Owen will bake off some bread for you to sample as he introduces you to the world of sourdough starters. And you will each make your own loaf of sourdough with Owen, choosing the flour combination of your choice. While you bake, Kathryn will be on hand to make you a bowl of panzanella, and a seasonal soup to accompany Owen's freshly baked loaves. And for dessert, Owen will teach you to make his sourdough waffles, served up with maple syrup. You'll leave us with all the knowledge you need to feed and use your starter on your own, since you'll be taking home a jar of Owen's starter to get you started  together with your bread dough, ready to bake at home.

Celebrating Easter. With Kathryn Joel & Doreen Prei

As we begin the long Easter weekend, we invite you to join us for a meal celebrating some of our favourite Easter foods. And where better to start than with an Easter Egg?! So we'll be starting with a dish of delicious Baked Eggs. Next we'll be traveling to Italy with Minestra Maritata, an Italian Easter specialty, mistranslated as Italian Wedding Soup in English. Then for our main course we'll be roasting up a Leg of Lamb, the favourite of so many cultures at Easter, together with fresh artichokes, another Italian tradition.  And for dessert? We're off to the UK, with our own homemade Hot Cross Buns, served with freshly made fruit preserves.

Perfecting Pizza in Your Home Kitchen. With Kathryn Joel & Doreen Prei

A good pizza is the ultimate in Italian comfort food, as perfect for a quick family meal as it is for a party. Join Kathryn and Doreen as they teach you how to make your own pizza dough and from it both white and red pizzas, using some of their favourite toppings. And for dessert we'll be serving up Affogato, another Italian Classic. Please note that in this class, you’ll be making and taking home your own pizza dough for your freezer.

Cook Like a MasterChef: A Day in the Kitchen with Doreen Prei & Kathryn Joel

Do you love the culinary arts, and aspire to cook like a Michelin star chef? Doreen Prei trained in Michelin star restaurants in Europe, and together with Cordon Bleu trained Kathryn Joel will teach you some of the tips and tricks of the professional chef’s world during this immersive day in the kitchen. Your day will begin at Old Strathcona Farmers' Market, where you'll shop like a chef together with Kathryn during her market shopping tour. Then you'll make your way to Get Cooking to meet Doreen, who will expertly guide you through a selection of delectable seasonal recipes whilst exploring a range of challenging techniques and ingredients. We'll start with lunch, and finish with a 3-course evening meal, with wine pairings throughout. This 9 hour master class will immerse you in the apprentice chef’s journey to culinary excellence teaching a full arsenal of culinary skills.

People wait hours for a good bowl of ramen – a Japanese noodle soup that brings together broth, noodles, and thoughtful preparation. Learn how to make your own perfect bowl with Chef Chris Tom-Kee who will take you through every aspect of preparing ramen, including making your own noodles and broth and perfecting the six minute egg. At Get Cooking we love making crêpes, and we're very excited to be adding this special class on crêpes to our cooking class schedule this fall. We'll be using crêpes in recipes that take us from cold appetizer, to hot main course, to dessert. As well as learning to make, and cook, the perfect crêpe, we'll be working on fillings, toppings and sauces for stuffing, drizzling and garnishing our crêpes, adding a breadth of versatility to your new-found culinary skill.

Fresh Pasta. With Kathryn Joel & Elyse Chatterton

Join Kathryn and Elyse for our ever popular hands-on pasta making class. During our class you'll each make a batch of your own fresh pasta dough, and learn to cut it two ways. We'll also be preparing some of Kathryn's favourite ricotta gnocchi as well as three of our favourite sauces to serve with our pastas: melted tomato sauce for the gnocchi; pesto alla genovese to go with tagliatelle; and a slow cooked duck leg ragu to serve with pappardelle. Then we'll end the class with a simple dessert before we send you on your way, ready to practice your newly acquired pasta making skills at home.

Turkish Flatbreads with Doreen Prei & Kathryn Joel

Flatbreads, like pizza, are a delicious and satisfying comfort food. And they're as fun to make as they are to eat. In this class, we'll be introducing you to our favourite Turkish flatbreads: Lahmacun, a lamb and tomato flatbread fragrant with the scent of cinnamon, cayenne, and cumin; and Gözleme, a spinach and feta stuffed and grilled flatbread. Together we'll make the doughs, toppings and fillings, as well as accompanying dips to serve with our breads. A more exotic, Eastern Mediterranean version of pizza and calzones, we'll be pushing the conventional envelope, introducing you to a familiar food with an exotic twist.

We love cooking Portuguese food at Get Cooking, so we're excited to be bringing back this old favourite along with some new recipes and techniques. We'll start our class with some of our favourite Portuguese tapas: Batter Fried Beans; Salt Cod Fritters; and Gambas al Pil Pil (spicy shrimp). Mexican Inspired. With Kathryn Joel & Doreen Prei

We'll be heading south for our inspiration, as we create a menu aromatic with chilis and spice, drawing on the delicious traditions of Mexican cuisine. Doreen and Kathryn will teach you to fuse the flavours of Mexico with their European techniques, as they cook with you some of their favourite Mexican specialties. We'll start with a ceviche, followed by our multi-layered and classic version of Tortilla Soup, based on a chicken and tomato broth and flavoured up with fried chilis, avocado and Mexican cheese.  Next we'll be braising some local lamb with pasilla chilis and squash, and serving it with a black bean polenta. We'll finish with our delicious chili chocolate ice cream with a goat's milk cajeta for dessert.

Island Inspiration: Caribbean Cuisine with Doreen and Kathryn

As the winter blues set in, escape with us on our journey to the Caribbean with a taste of its Island Cuisine. Join Kathryn and Doreen and learn about the rich tradition of Caribbean cooking, which blends flavourful influences from African, Indian, and Aboriginal cuisines. Together we'll be making Jamaican Beef Patties, followed by Jerk Fish with a Corn Salsa. And we'll prepare with you a Jamaican curry powder to spice up an aromatic Goat Curry, which we'll serve with Rice & Beans. Then for dessert, we'll be treating you to a Chocolate Rum Cake, served with a Passionfruit Sorbet.

This summer Get Cooking is moving it's kitchen from Kathryn's Riverbend home to a brand new commercial space at MacEwan University downtown.
