The Unexpected Fruit. Celebrating the Tomato with Doreen Prei & Kathryn Joel

As the summer near its end we invite you to indulge with us in a taste of one of summer's favourite fruits. An unexpected fruit, the tomato is at its peak at this time in its season. We will take you through a menu celebrating our local varietals. We'll start with a selection of appies: from Catalan tomato bread, to tomato topped roëstis and on to our signature ricotta fritters with spicy tomato jam. Then we'll use our own oven-dried tomatoes to compose a delicious Provençal tomato tart. We'll also use our favourite melted cherry tomatoes to stir into an irresistible lobster mac 'n cheese. And dessert will be our surprise, but it will feature tomatoes of course!

On the Asian Grill. With Doreen Prei & Kathryn Joel

Join us for a night of Asian Grilling. Just back from our trip to Vietnam, we'll be teaching you two of our favourite discoveries: bun cha, a duo of grilled pork (meatballs and loin) served with fresh rice noodles, aromatic greens and a fragrant dipping sauce; and squid, marinated and grilled on a banana leaf then served with steamed rice. We'll also highlight the flavours of Korea with a look at Korean grilled shortribs as well as Japan with a selection of yakitori. For dessert we'll take some of our favourite Asian flavours and combine them in a refreshing grilled pineapple sorbet, served with a coconut milk reduction. Weather permitting, we'll be grilling and eating on our summer patio.

Fresh Pasta. With Kathryn Joel & Elyse Chatterton

Join Kathryn and Elyse for our ever popular hands-on pasta making class. During our class you'll each make a batch of your own fresh pasta dough, and learn to cut it two ways. We'll also be preparing some of Kathryn's signature ricotta gnocchi as well as three of our favourite sauces to serve with our pastas: melted tomato sauce for the gnocchi; pesto alla genovese to go with tagliatelle; and a slow cooked duck leg ragu to serve with pappardelle. Stirring the Pot: In Pursuit of the Perfect Risotto. With Kathryn Joel

If we believed the chefs that we watch on TV, we might think that the possibility of perfecting risotto is beyond the reach of the average home cook. We disagree, and Kathryn will show you why as she teaches you how to make both vegetable and white chicken stocks and discusses rice varietals, since these are the building blocks of any risotto. Then together we'll prepare two types of risotto, to enjoy for dinner, using fresh and seasonal ingredients as they would in an Italian kitchen. We'll even make some arancini, delicious stuffed and deep fried risotto balls designed to use up your leftovers. And to take your risotto up a notch, we'll whip up a light and frothy parmesan foam to spoon over your risotto as it's served.

Doreen Prei was trained in Michelin star restaurants in Europe and together with cordon bleu trained Kathryn Joel will teach you the tips and tricks of the professional chef’s world. Sourdough Bread with Prairie Mill's Owen Petervine

Join us for an afternoon of bread with the delightful Owen Petervine of Prairie Mill Bread. Owen will bake off some bread for you to sample as he introduces you to the world of sourdough starters. And you will each make your own loaf of sourdough with Owen, choosing the flour combination of your choice. While you bake, Kathryn will be on hand to make you a bowl of panzanella, and a seasonal soup to accompany Owen's freshly baked loaves. And for dessert, Owen will teach you to make his sourdough waffles, served up with maple syrup and preserves. Simple Seafood Skills. With Doreen Prei & Kathryn Joel

So many home cooks are intimidated by the thought of seafood – how to choose it, how to prepare it, and how to cook it well. Doreen and Kathryn aim to make cooking seafood both fun and accessible in this exploration of simple seafood skills. Our menu will take you from shellfish to salmon, as we kick things off with a steaming bowl of delicious mussels.  From there we'll move on to the preparation of a delicious fish cake, which can be adapted to use as a burger, or a ravioli filling.  Next we'll look at cod then salmon, and show you how to prepare and cook them perfectly, with recipes that you can easily replicate and also build on at home. There's so much to learn, so we invite you back for more, since we'll be offering Advanced Seafood Skills for you to explore on November 2nd.

Mexican Inspired. With Kathryn Joel & Doreen Prei

We'll be heading south for our inspiration, as we create a menu aromatic with chilis and spice, drawing on the delicious traditions of Mexican cuisine. Doreen and Kathryn will teach you to fuse the flavours of Mexico with their European techniques, as they cook with you some of their favourite Mexican specialties. We'll start with a ceviche, followed by our multi-layered and classic version of Tortilla Soup, based on a chicken and tomato broth and flavoured up with fried chilis, avocado and Mexican cheese.  Next we'll be braising some local lamb with pasilla chilis and squash, and serving it with a black bean polenta. We'll finish with our delicious chili chocolate ice cream with a goat's milk cajeta for dessert.

With thanksgiving behind us, and the Christmas season approaching fast, what better time to think about keeping healthy eating in mind as we plan our everyday family meals. Kathryn and Elyse will guide you through planning and cooking easy, healthy family menus, and incorporating superfoods to boost your energy, health and well-being. The focus in this class is on proper planning for quick, healthy, and delicious dishes that are as easy as they are tasty, using a selection of fresh and seasonal ingredients. Thai Street Food. With Kathryn Joel & Doreen Prei

Whisk yourself away to the bustling and aromatic streets and markets of Thailand with Kathryn and Doreen, who will be teaching you a selection of their favourite Thai street food. We'll start with a wok full of Crab Fried Rice, followed by our favourite Hoi Tod, a combination of pancake and omelette, stir fried and finished with mussels or shrimp. Next on the menu is Chicken in Pandan Leaves, chicken thigh morsels that are marinated, wrapped, steamed then fried and served with a Thai dipping sauce. Then on to Satay, with our homemade satay sauce, served with a cucumber pickle. And for dessert, sticky rice of course, either white if fresh mangos are around or black, if they are not. Throughout the class we'll be discussing where to find and how to use the essential Thai ingredients that you will need to cook our tasty Thai recipes at home.  Street food has never been so much fun!

Let us put some "Ooh La La" in your cooking as we explore a feast of French cuisine, with our inspiration taken from France's classic neighbourhood bistro menus. We’ll show you simple ways to recreate some of the delicious bistro dishes that make French cuisine so great. Our menu will start with Kathryn's favourite Gougères, aromatic and cheesey little choux pastry puffs, then Doreen will show you how simple it is to prepare her Salmon Rillettes. The focus is on fast yet delicious dishes that are as easy as they are tasty, using a selection of fresh and seasonal ingredients. First up is a classic Spaghetti Carbonara, served with a green salad. Next we'll be wok frying a Thai inspired stir fry of Shrimp and Asian Greens. And we'll learn how to roast a chicken, perfectly. Then how to serve it, and even how to make a chicken stock. And finally for dessert, we'll whip up a light and airy chocolate mousse, which we'll serve with some macerated berries.

Lasagna Three Ways: With Doreen Prei & Kathryn Joel

Lasagna is one of the most beloved dishes from the Italian kitchen, as perfect for a party as it is for a family meal. But making a good lasagna takes time and some skill, so we've decided to add this special class on just lasagna to our schedule and teach you how to make three delicious lasagne, all from scratch. We'll start with the pasta of course, since the best lasagne start with a good fresh pasta. Then we'll turn to the sauces, as we make a vegetarian ricotta and spinach lasagna, as well as a classic alla bolognese, using bèchamel plus a hearty ragu. And finally we'll teach you our own favourite deconstructed version, finished with a parmesan foam.

An Eggscellent Brunch with Doreen Prei & Kathryn Joel

Eggs are in nearly everything we prepare and eat – we use them in baking, we use them in sauces, we even use them in cocktails, but more than anywhere else, eggs are found on the breakfast table. Probably the single most versatile breakfast ingredient, eggs can be prepared in a myriad of ways and are always satisfying, comforting, and oh-so-delicious! Join us for this special brunch class where we’ll be taking the simple egg and teaching you how to transform it. First we'll look at frittatas, perfect for a prepare ahead brunch, served with a green salad. A Moroccan Adventure. With Kathryn Joel & Elyse Chatterton

Let the heady perfume of the Spice Trail transport you to the markets of Marrakesh as you learn to prepare simple but delicious mezze, couscous, and tagines with Kathryn and Elyse.  Our menu will start with Kathryn's harissa spiced carrot dip, with our own homemade harissa of course, and a smokey aromatic baba ganoush. Poutine Three Ways: With Doreen Prei & Kathryn Joel

We LOVE poutine, but what's not to love? When you put together hot crisp fries, gravy and melted cheese you're onto a good thing no matter what. But in this class we're taking a good thing, and making it better! We'll be preparing three variations on poutine, and learning a range of skills as we do. So we'll start with Doreen's irresistible smoked mushroom poutine, then onto a lobster poutine and finally a french bistro twist on the original classic with pulled confit duck. Advanced Seafood Skills. With Doreen Prei & Kathryn Joel

Perhaps you love cooking seafood and want to enhance the skills that you've acquired on your own. Or maybe you've already been to one of our Simple Seafood classes but there's still more that you want to learn. In either case, this is the class for you. In this new advanced seafood class we'll be making fish and shellfish stocks and exploring how to use them. We'll also prepare scallops 3 ways: tartare; ceviche; and pan fried. And what would an advanced seafood class be without lobster? So we'll learn to cook and break down lobster and then use it to prepare a lobster bisque. Then finally we'll be working with whole fish, with a look at how to choose and store fish, as well as some butchery skills, and how to cook it whole, baked in salt, or as fillets, pan-fried.

We're very happy to be bringing back our popular Friday night kitchen parties this fall! Brioche & Milk Breads. With Doreen Prei & Kathryn Joel

During this special Saturday lunch-time class we'll be teaching you two quite different milk-based yeast breads: Kathryn's Italian Milk Bread, delicious served warm with sweet butter and preserves; and Doreen's brioche, which we'll be forming into rolls to serve with her mediterranean lamb and feta burgers, and also beignets to fry up for dessert and enjoy with a drizzle of homemade caramel sauce. At Get Cooking we love making crêpes, and we're very excited to be adding this special class on crêpes to our cooking class schedule this fall. Getting Saucy. With Doreen Prei & Kathryn Joel

Join Doreen and Kathryn for this brand new class focused on perfecting sauces, during the preparation of a 4-course meal. We'll be cooking up a menu designed to teach you essential sauce skills, starting with a savoury cheese soufflé using both a classic Béchamel and a vegetable purée. Next we'll whisk up a Beurre Blanc, and use it to accompany a perfectly cooked fillet of salmon.  Then on to Hollandaise, served with a pan seared and butter basted rib eye steak. And finally, for dessert, we'll learn to make Ganache, and use it to prepare our own home made chocolate truffles.
